Easter was a lot of fun this year. The kids spent most of the morning looking for their eggs and baskets. They were thrilled everytime they found a piece of candy, or an egg and opened it to see what it was. Tyler who had the stomach flu last week and still has yet to get his full appetite back ate nothing but candy the entire morning, and I still have to make sure all the candy is up high where he can't get it or he will eat it all day. He loves sugar! Except jelly beans. He says, "Jelly beans, I spit" At first we didn't understand what he meant, but in our bathroom sink there were remnants of spit up jelly beans. Funny kid!
We had my step-mom, my little brother and sister, and Nathan's parents over for dinner. It was nice to have the company over and I was delighted that dinner went so well. Over the past few weeks I have been researching non-dairy alternatives and found a non-dairy sour cream called, Better than sour cream. It is so similar to sour cream, you probably wouldn't be able to tell the difference. I also discovered how to make my own cream of chicken soup. I used a milk alternative called, More than Milk which is super creamy, and the soup, was better than the condensed soup I buy at the store. So, I used this soup and sour cream to make my own "funeral potatoes" which you have to have with ham and it was a hit. No one even knew that there wasn't dairy in it. Well, except the little bit of cheddar cheese I threw on top.
